Marinamos nuestra carne —ternera y pollo— durante entre 24 y 48 horas antes de que toque el asador vertical. Es más tiempo del que usan la mayoría de los kebabs que se venden en Europa, donde el marinado suele durar horas, no días. La diferencia no es sutil: se nota en cada bocado.

We marinate our meat — beef and chicken — for 24 to 48 hours before it ever touches the vertical spit. That's longer than most kebab sold across Europe, where marinating usually takes hours, not days. The difference isn't subtle — you can taste it in every bite.

Qué pasa realmente durante esas 24 a 48 horas / What actually happens during those 24 to 48 hours

Las especias necesitan tiempo para penetrar la fibra de la carne, no solo cubrir la superficie. En las primeras horas, la sal y los ácidos del marinado empiezan a romper las proteínas superficiales; en las siguientes, las especias —comino, cardamomo, pimienta de Jamaica, un toque cítrico— se difunden hacia el interior. Ese proceso no se puede acelerar sin perder profundidad de sabor.

Spices need time to penetrate the meat's fiber, not just coat the surface. In the first hours, salt and acids in the marinade start breaking down surface proteins; over the following hours, the spices — cumin, cardamom, allspice, a citrus touch — diffuse inward. That process can't be sped up without losing depth of flavor.

Por qué vale la pena esperar / Why it's worth the wait

Un marinado corto deja la carne con sabor solo en el exterior; un marinado de entre 24 y 48 horas la deja sazonada de verdad, capa por capa. A short marinade leaves the meat flavored only on the outside; a 24–48 hour marinade seasons it all the way through, layer by layer. Combined with slow cooking on the vertical spit, the result is meat that's juicy on the inside with a slightly crisp edge that's carved layer by layer — the signature texture of properly made shawarma.
