La Shawermeria was founded by a team of young Palestinians who brought authentic recipes, tradition, and a real part of their story to Valencia. It's not a franchise or a generic business idea — it's a deliberate attempt to share something real, at a time when a lot of "Middle Eastern food" in Europe has been simplified until it lost its identity.

Why Valencia

Valencia has an active university community, an audience curious to discover new flavors, and — until now — few options for genuine Palestinian shawarma beyond generic kebab versions. Opening here, at Carrer del Clariano 6, near the Algirós area, was a bet on presenting Palestinian cuisine as it actually is, without diluting it.

What doesn't change, wherever you order

The meat is marinated for 24 to 48 hours in traditional Levantine spices. The falafel is made fresh with real chickpeas. The sauces are homemade. That hasn't changed since day one, and it isn't changing now that we're also in Madrid, with a 100% delivery kitchen in Chamartín.

More than a restaurant

For us, every shawarma that leaves the kitchen carries something more than spices: it carries a real part of Palestinian culture and history to someone's table in Valencia or Madrid.
